Ingredients:

Bread improver / sponge dough

instant yeast 2 tsp (7grams)
sugar 1 tbsp
warm milk 1 cup

mix all together and let it bloom for 5 minutes.

all purpose flour 250 grams (2 cups)

mix all purpose flour with the bloomed yeast mixture and let it rise for 35 minutes. until doubled in volume.

Second dough: or main dough

all purpose flour 250 grams (2 cups)
powder milk 2 tbsp
salt 1/4 tsp
sugar 137 grams (2/3 cup)
yolks 120 grams (7 large yolks)
butter 70 grams (softened)
homemade bread improver

Cream cheese filling:

cream cheese 200 grams
butter 100 grams
powder sugar 175 grams
salt 1/4 tsp
vanilla 1/2 tsp
milk or cream 2 tbsp

Toppings:

1 box cheedar cheese

Oven temperature: 150°c I'm using gas oven
baking time : 15 to 18 minutes

Note:
do not over bake to prevent the bread from drying
do not over proff to avoid sour taste bread.

Super lambot at masarap tlga!!

I made 26 small ensaymadas from this recipe, di tumagal ng 2 days. lmao 😅

- Mainit ang temp sa bahay nung ginagawa q to kaya mabilis ang pg rise ng dough q, (approx. 40 minutes) 🙂

Just follow the recipe:
- binawasan q lng ng kaunti ang powdered sugar for the cream cheese filling. (even tho i have a sweet tooth)
- i substituted Quickmelt cheese for the cheddar cheese (pra malambot dn ang cheese at di gaano ka-salty)
- DIGITAL WEIGHING SCALE is most accurate talaga. So pagdating sa dry / solid ingredients, it’s best to use a digital scale.
(go by weight, NOT by VOLUME) ;

and Volumetric (ie. cups, tablespoons, etc) is for liquids.

PERFECT TALAGA! 😭👌🏻❤️

I just baked them today! It was delish but mine weren’t as fluffy since i knead all by hand. They are still fluffy regardless. Thanks for the recipe!

I tried your recipe ( except for the filling ) the other day and it’s the softest, fluffiest, and super moist bread recipe I have ever baked. I started my baking adventures 2 years ago looking for recipes that would satisfy me. So far this is the best. The bread really tastes good even without the toppings. I can’t believe I have finally found a recipe that’s not intimidating to bake. For years I’ve been looking for an ensaymada recipe that’s very close to the taste and texture of Mary Grace or Cunanan of Manila. Grabe, ikaw na the best ka 😍 I no longer have to ask my mom to buy me ensaymada from Manila to bring back here sa States 🙌🏽.
