Very good explanation! Another feature I use to further organize my selected packages is creating my own package sets. @world is a built in set, but you can easily create your own sets too. It's useful if you need to install a bunch of packages for a particular use case and you want to remember which packages were for that purpose. For example, if you don't want to use the Steam run-time, but use your native compiled gentoo libraries instead, you need to install a bunch of random libraries and often times older versions of libraries you might already have. This would really clutter your world file and you might forget in the future why the heck you have "dev-libs/libgcrypt-compat" in your world file. With sets, you can just throw these packages in your own @steam set. Then, if you ever needed to remove steam from the machine, you would know exactly what random packages were installed for that purpose and you could easily remove them all at once. Portage is really so well thought out and light years ahead of any other package manager I've ever seen.

Let's say I already emerged a package without using --oneshot when I should have. What's the best way to fix this without re-compiling the package?
