Just beginning my cutting board journey and I gotta this video has been extremely helpful. The acetone for the wood oils, the sled for the planer, and the speed square for the cross cut. Great stuff man gonna try it out tomorrow

I have found that a very useful shortcut is to use a handheld belt sander with 60 grit sandpaper to smooth out the worst of the unevenness after glueup, followed by a random orbit sander for more fine work. This is good for those without planers, and for end-grain cutting boards where planers are risky to use. I've also used this method for tabletops and other things too big to fit in my planer.
