This CHEESE is MITE-Y high in PROTEIN!

Today we are looking at a very interesting cheese under the microscope called mimolette!

Rich in colour but also flavour, this cheese has a very unique aging process... It requires help from a microscopic mite.

For those wondering, yes they can’t be seen with the naked eye, and no there’s little to none in the cheese itself, just the rind like he said. And the rind is safe to eat if you’d like! The mites don’t add anything negative, the rind just tastes bad already lol

years and years ago i saw a documentary about this or some related type of cheese where they actually showed people checking in ot it and appreciating how the mites jumped from cheese to cheese and i was so wildly grossed out that i never forgot and also will never forget.

i’ve actually tried mimolette before, it was a super tasty cheese with a really unique flavor. i would definitely try it again if given the opportunity
