🚨 Recipe 🚨
Ingredients:
4 oz Maple breakfast sausage
1/2 Red bell pepper (diced)
2 green onions (sliced & separated)
4 eggs
2 tbsp butter
4 oz freshly grated cheddar
1 box puff pastry
1/2-1 cup flour
Preparations:
-leave puff pastry out to thaw
-cook sausage until crisp, remove with a slotted spoon and set aside
-add peppers & whites of the green onions and cook for about 3-7 min or until softened, remove with a slotted spoon and set aside.
-add butter and add 3 eggs and scramble until soft, remove and set aside.
-add flour to your work surface and roll out pastry just a touch,
Remember to flour your rolling pin:)
-cut into 6 equal rectangles, the pastry is folded so this is the easy part
-assemble by adding cheese, egg, pepper mix, sausage, green onion & top with more cheese.
-repeat for 3 of the rectangles.
-use final egg to make an egg wash tp seal around the edges before topping with remaining 3 pieces of pastry.
-add flour to a fork and crimp edges to seal, once sealed throw in the fridge for 20 min to allow pastry to chill, then preheat oven to 400F.
-bake for 20-25min or until golden brown
-serve with my tomatillo salsa and enjoy :)
Note:
To meal prep, I recommend par-baking for 10min and then freezing once chilled. Wrap separately in foil and boom! Bake at 450 for Breakfast in 10 min on those hectic mornings!
