Triple Berry Clafoutis - Lynn's Recipes

Lynn demonstrates a delicious Triple Berry Clafoutis. This is great to serve as a dessert, especially when berries are in season. From a Simple Pantry via Pinterest. Serves 8

1 Tablespoon Butter
2 cups Mixed Berries (Raspberries, Blueberries, Blackberries)
1/3 Cup All Purpose Flour
1/3 Cup Sugar
Pinch of Salt
3 Eggs, beaten
3/4 Cup Whole Milk
1/4 Cup Heavy Cream
1 teaspoon vanilla extract
1/4 Cup Powdered Sugar (for garnish)

Preheat oven to 375°. Grease a deep dish pie plate with butter or cooking spray then add the berries and set aside.

In a large bowl, combine the flour, sugar, and salt. Whisk in the eggs, then add the milk, cream, and vanilla and stir until smooth.

Pour the mixture gently into the pie plate over the berries. Place in the oven and bake for 25 minutes, or until the custard has puffed and set, but still slightly jiggly in the middle.

Allow to cool on a rack for 15 minutes, sprinkle with powdered sugar and serve.

Hi Lady Lynn. Berry season is here. What a great dessert to use up fresh berries. It looks light and won't leave you feeling all bloated like a traditional dessert would. :)

Lynn, this looks yummy. The batter looks like a custard mixture, smooth and soft. And all of those berries go so well with it. Perfect for summer, There are many berries at the grocer store right now. I have a raspberry plant in my garden full of tiny raspberries.

When I saw the pic of the dessert, before you prepared it, I thought it was going to be different. It's a pleasant surprise! You didn't make a crust, and then a custard, so this is much simpler. Great choice on the seasonal fruits. I made your classic cheesecake for my dad. My parents used to go to NYC yearly, in early December. One of their traditions, was to eat at The Stagecoach Deli. Both of my parents thought your version must of been the same recipe. It was a huge hit. Everyone, except my dad, ate it with blueberries. Just wonderful. I no longer fear making cheesecake.
