Hi there, I have a jar of crushed ginger that I need to use up. How many teaspoons or tablespoons per kilo of feijoa's would you recommend? Thanks so much for the excellent tutorial, it was very clear and concise :D

Is there something else we can use accept white sugar? Like honey or something. For the leather? Will it come out the same? What other fruit can you use?
