KETO PUMPKIN CHOCOLATE CHIP COOKIE RECIPE

1 ½ cups almond flour
½ cup coconut flour
1 teaspoon baking powder
½ teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
¼ teaspoon nutmeg
¼ teaspoon allspice
½ cup unsalted butter (1 stick), softened
½ cup cream cheese, cold & cut into pieces
½ cup golden monkfruit sweetener (Lakanto brand)
½ cup Swerve or erythritol sweetener
1 egg (optional)
¾ cup pumpkin puree
1 teaspoon vanilla
1 cup sugar free chocolate chips (Lily’s brand)

Preheat oven to 325.
In a medium bowl, combine the dry ingredients, flours, baking powder & soda, salt, and spices. Whisk until combined. Set aside.
In a large bowl, cream the butter, cream cheese, egg (if using), sweeteners together until combined. Stir in pumpkin puree and vanilla until combined. Stir in sugar free chocolate chips.
Scoop into 1 inch ball and place on a parchment lined baking tray about 1-2 inches apart. Press down with fingers. Bake at 325 for 12 minutes until starting to brown.
Let cool on baking tray for 2 minutes before transferring to a wire rack.

I did add the egg, and had to substantially (over 4 minutes extra) increase the bake time, and they are still really soft. I think next time I might try 350 F and see how it goes. But really tasty!!

Same as @Brenda Tuttle, except I had to cook about 20 min., but they turned out to be very good. Next time, I will omit the egg and see which one I like best.

I imported this recipe into My Fitness Pal and it came back with 27 grams of carbs!! OMG! I've already eaten a serving and blew my carbs out of the water for the day. So much for being keto friendly.
