Albies are great to eat! I have cooked and served this fish to others that have said they are terrible to eat. Every time I have been asked what type of fish was that, my response is always, "It is that fish you told me was terrible to eat!"

My usual cleaning: Bleed after catching, cut out dark burgundy blood line, soak in icy water for 30 minutes to hour( normally leave in cooler after cleaning). At this point you can see any nasty blood line that was left behind. I sear them either on grill or cast iron pan like tuna. I will say that it is a very chalky, greasy fish if you try to eat it after it has gotten cold.

I have also feed it to people that does not like fish at all and agreed, if they had to eat fish they would want albacore.

I have heard all of my life how disgusting bonita are, but I have found that they're actually tasty. The key, I have found, is that you have to bleed them, and when you clean them, you have to remove that monstrosity of a blood line and, of course, skin them. Properly treated, I have eaten it as sashimi, and have also cooked it with standard tuna recipes (e.g. seared and grilled). But if you don't do it right, they're definitely really strong flavored fish.
I am not sure they're worth all that effort, though, and I still usually release them. There are usually so many other, tastier fish available at the same time.
