Kadai paneer is a popular Indian dish made with paneer (a type of Indian cottage cheese) and kadai masala, a spice blend. It's typically served with rice or naan bread, and it's perfect for a quick and easy weeknight meal. This kadai paneer recipe is restaurant-style, and it's sure to please everyone at the table.

Ingredients:
Coriander seeds - 2 tbsp
Peppercorns - 2 tbsp
Cumin seeds - 2 tsp
Fennel seeds - 1 tsp
Dried red chillies - 5-6
Oil - 3 tbsp
Onion cubes - 1/2 cup
Capsicum cubes - 1/2 cup
salt - 1 tsp
red chili powder - 1 tsp
Tomato cubes - 1/3 cup
Paneer cubes - 300 gms
Ginger-garlic paste - 1 tbsp
Turmeric powder - 1/2 tsp
Red chili powder - 1/2 tbsp
Coriander powder - 1 tsp
Cumin powder - 1/2 tsp

Instructions to make kadai paneer
To make kadai masala-
▪️Heat a pan. Add 2 tbsp coriander seeds, 2 tbsp peppercorns, 2 tsp cumin seeds, 1 tsp fennel seeds and 5-6 dried red chillies.
▪️Dry roast till they become aromatic.
▪️Remove and keep aside to cool. Blend it into a slightly coarse powder. Keep it aside.
▪️Heat 1 tbsp oil in a pan. Add 1/2 cup onion cubes, 1/2 cup capsicum cubes. Sauté for a minute.

For the gravy
▪️Add salt and 1 tsp red chili powder. Mix well.
▪️Add 1/3 cup tomato cubes and 300 gms paneer cubes and fry for 2-3 minutes. Take it out and keep aside.
▪️Heat 2 tbsp oil in the same pan. Add 1/2tsp cumin seeds and let them sizzle.
▪️Add 2 finely chopped onions and sauté until the onions turn golden brown.
▪️Add 1 tbsp ginger-garlic paste, sauté until the raw aroma goes away.
▪️Add 1/2 tsp turmeric powder, 1/2 tbsp red chilli powder, 1 tsp coriander powder, 1/2 tsp cumin powder and mix well. Sauté for a minute.
▪️Add 2 grated tomatoes. Add salt to taste, cook for 4-5 minutes. Sauté until oil separates.
▪️Add 2 tbsp ground Kadai masala, mix and cook for two minutes.
▪️Add water and let it boil.
▪️Add fried paneer cubes, capsicum cubes, onion cubes, tomato cubes, some ginger julienne and 1 tsp kasuri methi. Mix well.
▪️Cook it for 3-4 minutes.
▪️Add cream and some chopped coriander leaves. Mix everything well.
▪️Serve hot with naan, roti or paratha.
