India has a lot of good options considering it's history of vegetarianism.

Me as a broke vegan Indian:
Breakfast: Poha, veggie chowmein, paratha with pickle, besan chilla, etc.
Lunch: Veg thali, rajma chawal, soybean curry with roti, etc.
Snacks: Phuchka, samosa, corn chaat, etc.
Dinner: Khichdi, roti sabji, daal chawal, etc.

You don't always need cashews or tofu to be vegan.
Indian cuisine has a lot of vegan options available.

Being vegan in India is quite easy, especially because I was born in an already vegetarian family so I’ve never had meat and don’t crave it even after turning vegan.

I'm so happy with all the love Indian meals are getting. I feel the Indian chef here even put some westernization in the recipe by calling it a frittata instead of cheela and putting it in the oven. In most indian households we just make it on the pan by roasting it on both sides.

Observation: The Indian and Korean meals were more natural and less processed than the American ones. Also, the American meals had more substitions which kinda represents in a way the quality and length of life. Indians and Koreans are known for living long, healthy lives whereas Americans are known more for obesity. Just an observation

EDIT: It's my opinion. I did not come with facts and evidence, as I said, it was an observation made from my point of view and experience.

Just letting everyone know, not all packaged kimchi is vegan. Traditional and some packaged kimchi contains jeotgal (salted seafood), and fish sauce.
If you plan to make your own kimchi, you can skip the jeotgal, and add extra soy sauce instead of fish sauce

THIS IS SUCH A GOOD VIDEO!! People only think of American/western foods when it comes to veganism. When you incorporate global cuisines it is actually so doable to eat plant based!

In fairness what you call Indian and Korean 'vegan' are just traditional foods. American Vegan foods are modern trendy foods

The best part of Indian cuisine is that you don't have to veganise most of the dishes as its vegan on its own though it's called vegetarian

We as indians never realised how we sometimes had completely vegan meals and how it's quite easy to be vegan. Im a non vegetarian but I love to eat vegetarian too. The snack options are the best in vegetarian.

When I became vegetarian as a child, my family started eating a ton of Indian food because there’s so much variety. Super high amounts of flavorful veggie options but also plenty of meat based dishes. Made things really easy for me growing up. I’m not vegan myself but it’s not surprising to me that there are some pretty simple substitutions
