Twilight’s dislike of her hands I think has more to do with missing her ability to move things with her magic than her hooves. Considering her special talent is magic she’s much more used to that form of moving things around. Any time she’s forced to do things earth pony style in Equestria she’s usually uncomfortable/awkward.

The difference between their uses of EveryPony and EveryBody, is that they live in a country that is majority Ponies.

I'm sure they would use Everybody if it included different vastly different races. Which does happen later in the show, like later later later later, where we meet way more non-pony characters that isn't an Ass or a Zebra
