10 Min. Meal Prep Dinner

This slow cooker lemon chicken makes healthy eating simple! It's the prefect option if you need dinner done when you get home. Ten minute prep in the morning and this crockpot lemon chicken is done when you walk in the door. Add a steam veg on the side for a complete meal.

Ingredients
1.5 lb Boneless skinless chicken thigh (or breast if you prefer)
-1 lb Baby red potato, halved
-1/2 Medium onion, chopped
-1/2 C Low sodium chicken broth
-2 t Garlic powder- divided
-2 t Onion powder- divided
-2 T lemon pepper-divided
-Juice of 1 lemon

Instructions
-Chop potato in half and place in bottom of crockpot
-Chop 1/2 onion and place on top of potato
-Add 1/2 C Chicken broth
-Divide seasoning into 2 small bowls. Each bowl should have 1/2 t garlic powder, 1/2 t onion powder and 1 T Lemon pepper
-Sprinkle 1 seasoning bowl into crock pot
-Add chicken to crockpot
-Squeeze juice of 1 lemon onto chicken
-Add second bowl of seasoning on top of chicken
-Cover and cook on high for 3 hours or low for 6-8 hours

Serve with steamed veg of your choice, I used green beans.
