The webb application for Blockbench can be installed on your phone and tablet devices.You can ofcourse use many different apps for browsing files and editing addons. There are many more but those I showed in this video. A good tip is to look into the app called Addon Maker, it has been upvoted by many!

Back when this plugin wasn't a thing, creating The Yoshi Mod was a very tough task, especially the fact that I had almost no experience whatsoever when making addons. Now, I have some experience, but I would definitely recommend this plugin for beginner Bedrock modders.

When I get to the export screen it only gives me the option of exporting it as a mcaddon

But you should remove the “Baloonable” from the behaviour pack, because if you turn on pocket edition you can give it a baloon and it will fly 😆
And also a short tip: You can change the texture of the cube inside of the UV (Move the texture of the block around)
