doesnt really matter if you have a pally with max vit. just dont sit on the potions or eat to many pink and you will be fine ;)

When only having 57 def it is worth it to sacrifice 10 dex to gain 6 def, unlike the warrior which would sacrifice 20 dex and unlike the knight which carmor is useless. Candy is better on paladin, cause without it its just not good enough def to be a melee.
