Personally, I think the ultimate brownie should also have a crisp, crinkle top that has a delicious, moist brownie peeking through.

Hi Gemma! I love your brownie recipe and make it all the time! I did change the method and stuck with it since, it really gives that crinkly top of a classic brownie. I whip the eggs and sugar till doubled, the cocoa is bloomed in hot melted butter then added (when cooled) to the whipped eggs then the flour goes in. I dont add chocolate chunks because i normally top my brownies with ganache. Give it a try and see if that crinkle is a good one 😉 cheers from Borneo!

They look amazing. I have a question? I am sort of confused... when you said your pan was lined and it was only on the bottom of the pan but when you got it out of the oven the liner was all around ? so do we have to just line the bottom of the pan or use the liner on all sides? thank you for sharing your great recipes!!

Yes, PLEASE do chewy brownies. I miss them from my childhood. All the recipes I've tested are the type that just disintegrate upon entering your mouth. I like the chew!!

just made this brownie.. followed the exact recipe and this was the best brownie i have ever made. it has just the right texture.
and this was actually the first time i used brown sugar in a brownie recipe and i LOVED it..

my mom usually gets brownie mix, and every time without fail, they have a cracked top and are absolutely divine. maybe it's mom magic?

Crinkle tops on brownies are (for me) the reason brownies look so good. But i never got the perfect crinkle top, so i'll definitely give this a try, thanks! and chewy brownies also sound good too..

Hey Gemma I did this (no chocolate) and they were first raw and I put it back in. Did it again and the same brownies were GREAT!!

Question for you Gemma... So at the time 3:05 VS when they come out of the oven at 3:15 the parchment paper was only at the bottom in the shot at 2:55/3:05. But when you show them baked the parchment paper is above the edges of your baking pan.
How should we line our pan ? Did you swap the batches ? They are different than when you put them in the oven ? Please help, thanks !
