Nuvole Di Drago, now sold in almost all supermarkets, until recently were a prerogative of oriental restaurants. Difficult to understand at first taste the composition of these particular white chips which, in contact with the mouth, almost tend to fizz. It is their English name, prawn crakers, that tells us something more, that is to indicate the presence of prawns or, generally speaking, seafood in the dough.

In fact, the unusual recipe of the Nuvole Di Drago is obtained by working together Tapioca Flour, obtained from the Cassava plant, a tuber native to South America, and Shrimp pulp.
