Recreation of Reynold Poernomo’s Alice in Wonderland Dessert - Down the Rabbit Hole

Dessert with a sprinkle of magic. This is Chapter One of Alice in Wonderland - Down the Rabbit Hole.

This is a dessert I made that’s (hopefully) a faithful recreation of a dish by Reynold Poernomo done on Masterchef Australia. I didn’t have a recipe to follow, so I learned how to create the individual components and then pieced everything together. These include crème pat, matcha crumble, white chocolate disk, pistachio sponge cake, frozen lime yogurt foam snow, dark chocolate log and branches, gold dust, edible flower petals, and hot caramel.

I have a new respect for chocolatiers because making and piping out this chocolate log and tree branch took maybe 10 times longer than I expected.
