In season 1 of September Pies we made a peach pie and it was a fail. We are back in season 2 to try and made a flavorful but not soggy fresh peach pie. Can we do it?

Add the lemon to the peaches as soon as you have cut them. Prevents browning while you are preparing the rest. Add some corn starch to thicken.

Usually adding a little cornstarch to your filling will make it thicker once it has baked and cooled. I suggest mixing it with the sugar before adding it to the peaches. Looked really good!

Pearl is so well spoken, that crust looks amazing! My aunt was well known for her pie making, when I would help her she would give me the left over crust to put sugar and cinnamon on and I would bake it and eat it. It was such a huge treat!

The gentleman from the buttery flaky crust just passed away in August. I am sure he would have enjoyed pie month! He was a bit of a celebrity here in his home state of Maine. 😊

Great that you found peaches that actually tastes like peaches. My mom always used lard for her pastry when we lived in Canada, when we moved to Texas in '57, she couldn't find lard anywhere and had to switch to shortening. She said it took her forever to get the crust right. Looking forward to the next pie. This one was beautiful, especially with the lattice top.

I recently made a peach pie with peaches from our own tree for a potluck and switched out the sugar for dark brown sugar- you came to my mind because you mentioned how robust the flavor was. I got rave reviews on the pie and it was gone very quickly.
I didn’t use the lard for the homemade crust, but I have the recipe printed from your last season and will definitely try the next time I bake one!

Gorgeous, Megan! It is key that they loved the flavor, so I'd be inclined to focus on the only problem. The liquidity. Remember how wet the mixture was in the bowl with the sugar, peaches and other ingredients? I think it was a bit too wet at that stage. Googling I learned sugar macerates (draws out the liquid) the peaches. So here's a thought. Add the sugar to the peaches and let them sit for 30 minutes to an hour. Then, drain that liquid off into another bowl. To that liquid, add 1 Tablespoon of tapicoa starch for every 2 cups of peaches. (A poster on Quora made this ratio suggestion) Mix the tapicoa starch with that liquid and dump it back in with the peaches. It might work the same if you just adding the tapicoa starch at the same time you added everything else. I read that tapicoa starch is clear so it doesn't impact the visual beauty of the fruit -- it sets up clear. Cornstarch and flour will be more "foggy" in appearance. One of your children commented about the great peach flavor, I'm now guessing that the sugar, pulls the juices out of the peaches and enhances the flavor of the whole pie. From what I read, all fruit pies can have this problem, maybe it will help as you move forward with pie month!
