Bone marrow is excellent when taken out of the bone with a knife and spread on garlic toast. Very good for you with protein.

If you see the bone split and roasted until caramelized on top you might want to give it another try - but only if you like a fatty cut of beef

I’m so cheap that if I go to the bacchanal buffet for dinner, I would not eat all day 😂. You ate two buffets in one day. Btw, bone marrow are the best…yummy.

The Bone: remove the marrow from inside the bone with a knife, mix with the polenta and spread on toast.

After the Broccolini, ur like Pass on the Bone Marrow Polenta. That is the best thing at the Buffet in my opinion. Us a chopstick or knife and puncture the marrow so the fat drips into the Grits/Polenta on the bottom. It is delicious.

Before Covid, this was one of the best buffets. Sadly they have lost the crab legs but the $$ did go down. I hope you had a good meal on your return to Las Vegas.

I couldn't wait to see you try the waffle. When we had the Bellagio buffet, I tried the waffle. It was horrible; you are generous to give it a 6 out of 10. I was watching your face expression as you tried it. I could tell that you were reacting as I did. Then you picked up your beverage to wash it down, and I knew for sure that you were having the same experience as I did. A waffle should be crispy on the outside and light and fluffy on the inside. The Bellagio waffle has the density of a scone. Very dense. Mine was slightly undercooked too, which made it that much worse. Inedible in my opinion. They need to change their batter recipe. On a positive note, at the bread station they will prepare you a terrific avocado toast, custom and made to order.

Sorry you had a bad bone marrow experience. The proper way is have a very tiny spoon of marrow. Place it on a buttered toast point and enjoy. I love garlic buttered toast with it.

Bone marrow is a simple pleasure of life. It's like eating beef fat. It's buttery with intense beef flavor. But it's difficult to eat just a pat of butter. That's why it's usually spread on toast.
