Vegan Gluten Free Mini Donuts

I am a classically trained pastry chef, but when I got out of culinary school, I was looking to dabble in the world of vegan and gluten free baking.

This recipe for vegan gluten free donuts from Erin McKenna of Babycakes NYC was my first ever such endeavor. These donuts have become legendary here in Malibu, and have even made their way into the mouth of Barbara Streisand! True story! It happened right in front of me!

So, without further ado, here is what you need to make these donuts:

1 cup vegan sugar (you can use regular white sugar if you're not completely vegan)
3/4 cup white rice flour
1/3 cup garbanzo and fava bean flour
1/2 cup potato starch
1/4 cup arrowroot
1 1/2 tsp baking powder
1/2 tsp xanthan gum
1/2 tsp salt
1/8 tsp baking soda
1/3 cup melted coconut oil
6 tbsp unsweetened apple sauce
1/4 cup vanilla
1/2 cup hot water

Preheat the oven to 325F.

1. Prepare 24 mini donut molds with coconut oil and place on a sheet pan. Set aside.

2. In a bowl, whisk together all of the dry ingredients. Add all the wet ingredients and mix them in with a spatula until smooth.

3. Fill each donut mold almost to the brim with the batter. Bake for 7 minutes, and then turn them around and bake for another 7-9 minutes or until baked through.

4. Gently pull at the sides of the donuts in the pan to keep them from sticking, being careful not to burn your fingers (see video above).

5. Toppings: If you'd like to eat the donuts as is, let them cool in the pan for a few minutes before tapping them out (see video). If you'd like to top them with cinnamon sugar or anything that needs to stick to the donuts, you'll need to take the donuts out of the pan while they are still hot (see video). If you'd like to top them with a drizzle of dark chocolate or some other topping, you can let the donuts cool completely before proceeding.

Hi! Will just straight chickpea flour work? I'm from New Zealand and I'm not sure we have garbanzo Fava bean flour here, or are there any other flour mixes I can use? Oat? And is arrowroot the same as tapioca starch?

Hi Lauren! I ABSOLUTELY LOVE YOUR DONUTS! But if you are looking for a healthy sugar replacement i use Fructose not fructose corn syrup but Fructose fruit sugar it works amazingly just like regular sugar. Just a suggestion. p.s i subscribed cause i think its amazing that there is someone who makes vegan gluten free stuff!
