How to make Nettle Pesto - Green Renaissance

Recipe:
2 garlic cloves
2 tablespoons pine nuts, roasted
2 tablespoons grated Percorino or Parmesan cheese
6-8 tablespoons blanched, chopped nettles
pinch or 2 Coarse Salt
Extra virgin Olive oil to desired level

Method:

Toast the pine nuts in a pan.
Blanch the nettles with the nuts in the hot pan.
Put the nut/nettle mixture in a pestle and mortar with the garlic and grind to a pulp, adding olive oil as you go.
Add the cheese and grind some more.

Tried a variation of this recipe today. I can't tell the difference between nettle pesto and basil pesto and that's a fact. I like how you didn't blanch the nettles - just blending them, or crushing them in a pestle and mortar will automatically get rid of the sting.
Thank you for creating this video, in my opinion this is the way educational YouTube videos should be made

It's such a wonderful thing, to be able to just walk into your garden or some meadow and harvest nettle, wild garlic... And make fresh healthy pesto. Watching your videos made me fall in love with South African Republic and it is now a dream (goal?) of mine to come to Hermanus one day and maybe even stay permanently ❤️

My grandfather used to make nettle soup and nettle wine. So delicious.

I grow so many nettles, they would take over my whole garden if I let them, lol but only leave a small patch in my vege garden because the Red Admiral butterfly's LOVE them for caterpillar food and their chrysalis's, not to mention so do the white cabbage butterfly's so they leave my cabbages and lettuces alone, lol ;) but now I will let a huge patch grow....MMmmm nettle pesto sounds delicious!!!! thanks for an awesome vid ;)

Great video! BTW, you're using wood sorrel, not clover. They're both edible, but wood sorrel is more delicate and has a unique sour flavor from the oxalic acid. Clover leaves, on the other hand, don't have much flavor at all, although clover flowers have a sweetness to them.
