Gennaro and this video helped me understand caprese salad so much more, even though I've had it several times in restaurants. When you cleanly the cheese and the tomatoes in tidy slices like some restaurants and most videos, and then drizzle tiny bits of olive oil on top, you don't get that delicious mixture of tomato juice, generous olive oil, and broken cheese. I think you have to toss it for it reach its maximum potential. I'm making it all the time now for an easy packable lunch.

Why am I watching this? I think i made this salad before I was even 10 years old! I have likely made it over 500 times... in one day (that is Mother's day at a an Italian restaurant for you) but I click on it because he just has so much joy.

I have basil, olive oil, salt, pepper, I'm going out right now to pick up some burrata, or fiore de mozzarella.  Every time I see versions of this salad I have to make it.  Thank you Gennaro for reminding us how some  simple dishes can be consistently delicious.
