Carrot mini cake🐿️🥕

INGREDIENTS 🥚
FOR CANDIED PECANS:
1 egg white
3 tablespoons (45 g) granulated sugar
¼ teaspoon ground cinnamon
¼ teaspoon coarse kosher salt
1 teaspoon pure vanilla extract
1 cup (130 g) chopped pecans
FOR CAKE:
1 cup (125 g) all-purpose flour Note 1
1 teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon baking soda
¼ teaspoon coarse kosher salt
¼ teaspoon ground nutmeg Note 2
3 medium carrots Note 3
2 large eggs at room temperature
½ cup (120 g) Greek yogurt at room temperature
¼ cup (60 ml) vegetable oil
½ cup (100 g) granulated sugar
½ cup (100 g) brown sugar either light or dark
OPTIONAL FILLING:
1/2 batch pineapple curd for filling, if desired
FOR FROSTING:
8 oz (250 g) cream cheese at room temperature
¼ cup (55 g) unsalted butter at room temperature
2 cups (240 g) powdered sugar
2 teaspoons pure vanilla extract

INSTRUCTIONS 📝

If you're planning to fill the mini cakes with pineapple curd, make it first before you start making the cake.
TO MAKE THE CANDIED PECANS:
Preheat the oven to 250°F (120°C). Line a baking sheet with parchment paper, or a silicone mat.
In a small dish, mix the sugar, cinnamon and salt.
Whisk the egg white and vanilla extract until nice and frothy, good 3-4 minutes. (Make sure the mixture is frothy, as pictured above.)
Add the chopped pecans and mix well.
Using a slotted spoon, remove the nuts and toss the pecans with the sugar mixture until the nuts are evenly coated.
Transfer the coated pecans onto a prepared baking sheet and spread into a single layer.
Bake the pecans, stirring and checking every 15 minutes, until the nuts are evenly browned and crisp, about 45 minutes. Cool completely on a wire rack. If desired, you can chop the candied pecans into even smaller pieces.
TO MAKE THE CARROT CAKE:
Preheat the oven to 375°F (190°C). Line a baker's half baking sheet with parchment paper and spray cooking spray all over the parchment paper and on the sides.
In a small bowl, combine flour, baking powder, cinnamon, baking soda, salt and nutmeg. Set aside.
In a mixing bowl with a paddle attachment, mix together eggs, Greek yogurt, oil, sugar, and brown sugar until well combined.
Add flour mixture and mix just until combined. Don’t overmix at this point.
Add grated carrots and gently fold the batter with a silicone spatula.
Pour the batter into the prepared baking sheet and tap a few times to get rid of bubbles.
Bake for 15-18 minutes, or until the top is golden brown and inserted toothpick comes out clean.
MAKE THE CREAM CHEESE FROSTING:
Beat the butter and cream cheese on medium-high speed until fluffy for 1 minute.
Add powdered sugar and vanilla extract. Beat on low speed for a minute. Then increase the speed to medium-high and continue to beat until smooth and fluffy, about 3 minutes.
Transfer the frosting into a piping bag with a plain round tip, if desired. (Alternatively, you can simply use 2 teaspoons to frost the cakes.)
TO ASSEMBLE THE MINI CAKES:
Once the cake is cooled completely, carefully transfer the cake onto a flat surface. And cut out 2-inch circles using a cookie cutter (I love this cookie cutter set!) and arrange the mini cake layers on a wire rack.
Pipe a ring around the edge on bottom cake layers and add pineapple curd in the center. (Alternatively, if you're not using pineapple curd, spread a heaping tablespoon of cream cheese frosting on the bottom cake layers and sprinkle candied pecans).
Then place the top cake layers over the frosting. Finally, spread more frosting on top and sprinkle candied pecans.
Store the cakes in the fridge, covered, for up to 3 days.
Mix the leftover cake scraps and frosting in the mixing bowl with the paddle attachment, or using a handheld electric mixer, and make some cake pops.

They should have kept the union from what it sounds like these petty rules were inconveniences and annoyances. They should have kept union to fight back against that type of stuff

We had teachers with coffee machines in class rooms. Like hell no. And literally any job and everonw would be pissed.

I worked at my school, it was a program, my teacher was my "manager", I was 16, they kept threatening to withhold my check that they were paying all of us... I brought up the laws on child labor, I told them that they couldn't physically withhold money or my check from me no matter what, even if I took breaks because my back kept hurting due to consistently being the only one to pull weeds, they kept threatening to withhold money for every minute I took on break.

I hope you're keeping the possibility for an actual union open in the future, now you know y'all can do it.

I drank energy drinks and/or coffee all the time when I was 14 because school was too early for me so that would be nuts if my teachers couldn't drink it, but I had a bottle of red bull standing on my desk every day.

Took me into his office, sat me down, and informed me we “have beef”. He then proceeded to list everything he didn’t like about me before asking if I had anything to tell him. I didn’t. I’d been working there twice as long and thought we were fine. After that, I didn’t give a crap and quit less than a year later. He wasn’t even my supervisor. I was in a separate but adjacent department that worked closely together.

I used to work at Marco’s pizza there’s many things they did that they had to stop doing. One was you have to clock out every time you have to go to the bathroom. After I got cornmeal in my eye they had to stop doing that. Another one was you couldn’t refill your tank while on shift. They had to stop doing that when a coworker broke down because he didn’t have gas to do a delivery. The topper on the cake was when I called off because I didn’t have a car and I was delivery driver I needed to call off not only because it was trick or treat night for my kids but I didn’t have my car so couldn’t do my job. They told me to come in anyway. I told them how am I supposed to do my job with no car. I didn’t get an answer so I hung up. I no called no showed the next day and two weeks later I hear everyone just walked out and quit

A grocery store chain used to offer employees a 10% discount on all their groceries whenever they scanned a membership card.

Then they stated that, due to employees abusing them, they were taking the discount away and changing it to 10% once a week and only at the store you work at. Everyone started shopping elsewhere for their big grocery trips.

The thing is, one of the managers told me in confidence that there was no actual abuse of the employee discount. Their entire system got hacked through one of the gas station pumps, and some of the information stolen was employee account details.

So instead of going through the trouble of fixing a handful of employee accounts, they lie to both cover their ass and are able to get away with charging employees more than they used to.

I used to work in a school for special need kids. We worked on the autonomy of the kids. Most kid went to the bathroom unsupervised. The principal at a morning team meeting showed a picture of a bathroom full of shit and yell about the lack of supervision. Most people were still eating their breakfast. It was disgusting.

Worked in an office with a glass conference room. They forbid us to close the blinds during meetings because they thought we were plotting against management. All meetings had to be held in full view of the entire office.

This is the most teacherthing I have ever heard. Worked 14 years in a school & learned quickly that teachers doesn’t have blood they have some form of caffein in their veins instead of blood. Only somekind if higher being would be able to save you if you took away their caffenaited beverage. So a group of teachers forming a union because of coffee does not suprise me at all.

Banning energy drinks and tea made it clear that it wasnt about the kids but about attempting to force control over employees. The manager at my Walmart took away our 1 hour breaks until we threatened to unionize. I left right after and learned they tried cutting the breaks again this year.

One minor weird rule at a school I teach is that the students are not allowed to go to the shops during the school program. Either go before or after the program, not during. They would go each break and would go to the farthest one, spending all the break just to buy. And then they would have to eat in the class.

my work has a little cake like this called a maple pecan bunt cake. add maple syrup to the frosting and add pumpkin to the cake. trust me
