Cookie butter coffee, no fancy espresso machine needed. 😉

Cookie Butter Coffee
Makes 1

Ingredients:
1c of hot strong brewed coffee
⅓ c whole milk
1 TBS cookie butter, divided
Vanilla simple syrup*
Biscoff cookies (optional)
Cinnamon

*To make vanilla simple syrup combine ½ c sugar and ½ c water in a saucepan over medium heat. Cook stirring occasionally until the sugar is dissolved. Remove from heat and allow the mixture to cool for 5 minutes. Add 2 TBS vanilla extract. Allow mixture to cool completely before storing in the fridge for up to 3 weeks.

HOW TO

1. Melt the cookie butter in the microwave for 15 seconds until it melts. Pour half of the cookie butter into a frother along with the milk. Froth.
2. Drizzle the remaining cookie butter inside of a mug. Pour in hot coffee along with vanilla simple syrup. Pour the cookie butter milk over the top. Sprinkle extra cinnamon and serve with a Biscoff cookie.
