SOFT PIE WITH SQUASH AND CHEESE

The combination of pumpkin and cheese is already a lot, but when you wrap it all in a pastry shell and put it in the oven, the whole thing becomes atomic: a flavor explosion you will remember for a long time.
The ease with which you can pack this recipe is disarming, give it a try, come on.

Ingredients:

500 g / 17.63 oz squash pulp
salt, pepper, oil
1 onion
thyme or rosemary
250 g / 8.81 oz ricotta cheese
120 g / 4.43 oz fontina or other cheese
50 g / ½ cup grated parmesan
10 amaretto biscuits
breadcrumbs to taste
300 g / 2 ⅓ cups flour
180 ml / ¾ cup water
1 tsp salt
3 tbsp oil
½ sachet of savoury pie instant yeast

How to make it:
Prepare 500 grams of diced pulp from a pumpkin of your choice.
Cut the onion into small pieces and sauté in a pot with a little oil.
Add the pumpkin and cook together for 3-4 minutes, while adding salt, pepper and herbs, perhaps a sprig of thyme.
Add half a cup of water, cover and cook for at least 10-12 minutes.

While the pumpkin is cooking, prepare the dough, but if you want to buy a ready-made puff pastry from the supermarket, that's fine too.

Put the flour in a bowl and mix in half a package of instant pie yeast (it's like pie crust but without the vanilla). Add the water, salt, and oil.
Knead; if it is too sticky, add 2 more tablespoons of flour.
Make a ball, cover and let rest for 10 minutes.

Once the pumpkin is cooked, add the ricotta, a handful of grated cheese and mix. Add the diced cheese and mix well; you can thicken it by adding a little breadcrumbs.

Using a rolling pin, roll out the dough half an inch thick and place it on a baking sheet lined with parchment paper.
The dough will be wider than the baking sheet, so it will cover everything up to the edges. Fill the baking sheet with the filling, spreading it well.
Cut the excess dough away from the edges; you can make pizzas with it.
You can cover the pie with different kinds of seeds or just a sprinkling of cheese.
Bake at 180°C / 356° F for 40 minutes.
