Well, this not really something new. As a laboratory chemist with extensive distillation experience, the efficiency of a column is the number of theoretical plates. It would be quite interesting to take periodic samples for gas chromatography analysis.

Nice, if you tap a bit lower for the ethanol, the methanol will rise to the top for removal. Methanol is what causes most hang over symptoms and is really not good to be drinking.
