Why would you do this procedure? (Aside from shady dentists inventing procedures to make easy money?)

When I broke of half of one of my big front teeth and my dentists remodeled the missing half he actually mirrored the uneven edge of the still complete one. He was quite proud of that in fact. And I can understand why the result looks like a completely natural tooth (if you don't happen to shine a light through it from the back in which case you can faintly see the broken off edge)
