For Stephanie Alexander and anyone else interested in Chestnuts and Chestnut flour: I am not an expert, or even an amateur, BUT! I have heard that before maize corn made its way to Italy, polenta was not a corn thing, but a chestnut thing. After Maize Corn arrived, chestnuts were considered "poor people food". Now it's considered a delicacy, rightfully so, as chestnuts are sweet, delicious, moist, and actually super nutritious, not just in calories. In Italy (and also Spain, I think) Chestnuts and their flour are a common food, used for pasta and gnocchi and all kinds of specialties. It is common to buy canned chestnut meats (roasted or steamed, shells removed). They are sweet and delicious, great in stuffing, savory chestnut soup is scrumptious. If you'd like more info about the flour, check out the Pasta Grannies channel, and search "chestnuts". That pasta grannies channel is amazing anyway.

Earthquake precautions should be more than that - make sure your shelves have some kind of restraint, whether it's a bungee cord or a closure on a cabinet door. I live in California so I know what happens to unrestrained glass - it falls to the floor! A lip on a shelf is helpful, but an actual bar or bungee cord is best.

You can also Can Water.  As you empty jars and get a patch can some water in a water bath.  This way you have water in case of emergency.  Even if you don't need the water use it when canning time comes around and you need jars...…. just use the water for your canning needs and you know the jars will be clean.

Just found your channel. You guys are a wealth of knowledge. Just did my first canning a few weeks ago made grape jelly and apple butter. I have the fever now. Found a all American canner on Facebook marketplace for 100 . So now I'm ready to graduate to canning veggies. Y'all do things like my mom did but she would never let us hang in the kitchen she would run us out so I didn't get her wisdom on these things.

I fell asleep last night during the live show but I wanted to say I make a 1/2 sugar fig butter that I use to make my version of a biscotti . I make like a biscuit dough with egg and milk, then roll it out and spread the fig butter down the center and fold the sides over it and bake then slice into biscotti similar to the ones at Barnes N Noble coffee shops
