The word “persons” exists. But it is mostly used in legal language like acts, statutes etc.

I did not know the plural for ox was oxen. I love english!

"fungus" and "cactus" are loanwords from Latin, that's why they use "-i" suffix for plurars (in Latin, it was actually ī, so they should be "fungee" and "cactee")
