Here is a delicious recipe for a super crunchy cheesy chimichangas. You can use store-brand flour tortillas or for a tasty version, you can make your own homemade soft flour tortillas. *What is a chimichanga?* Chimichangas are essentially a deep-fried burrito. The difference between a burrito and a chimichanga is burritos are soft tortillas filled with various meats or ingredients with no toppings. Chimichangas are fried until crispy and golden. There are various fillings and toppings one can put in or on chimichangas. Chimichangas are not authentic Mexican food and originated somewhere in the southwest of the U.S.

8 oz block cream cheese (softened)
1 can of green chiles
8 oz shredded Colby Jack cheese

I just made these tonight. I did cheat and buy a rotisserie chicken. As I was cooking the chicken, spices, cream cheese and green chilies down, I heard whatever your making smells D@$@ good. 😊 I plated his, topped with the Mexican sour cream, salsa and avocado slices. He was ohh myy this is delicious! Yup I'd eat that again. My picky teen daughter took pics n raved about it. Thankyou for this recipe

Thank you for this recipe! Burritos are so expensive at the store these days so I've been making them at home. But now I have a new chimichanga recipe to try out for my teenagers, I know they are going to love it. They love beef but maybe they'll like these chicken ones too.
