There was a time when eggs, milk, and butter was rationed. This Wacky cake was a solution to those in the 40s who wanted a chocolate cake. Jo Ann shows you how to make it and with the costs going up on eggs and milk, a great alternative!

WACKY CAKE
1 ½ cups all-purpose flour
1 cup white sugar
4 Tbsp. unsweetened cocoa powder
1 tsp. baking soda
½ tsp salt
1 tsp. vanilla extract
1 Tbsp. apple cider vinegar
6 Tbsp. vegetable oil, (or can substitute half of this with applesauce)
1 cup water

Grease and flour an 8” x 8” baking pan.

Mix flour, sugar, cocoa, and baking soda in a medium bowl. Make three depressions in the dry ingredients. Pour vanilla into one depression, vinegar in another, and oil in the third one. Pour water over all and stir well.

Bake at 350 degrees for 30 minutes or until toothpick inserted in the middle comes out clean. Place cake on cooling rack and cool completely. Cover with frosting.

CHOCOLATE FROSTING

4 Tbsp. vegan “butter”, room temperature
7 Tbsp. baking cocoa (Makes a dark chocolate frosting, use less for a lighter chocolate)
2 cups powdered sugar
2-3 Tbsp. almond milk
1 tsp. vanilla extract

Mix all ingredients together in a bowl, (use only 2 Tbsp. of the almond milk at first) and blend together with a mixer. Add more almond milk as needed until it is of desired consistency.

I enjoyed watching this and the mention of Weleetka cafeteria. I loved their Wacky Cake and remember working in the cafeteria a few times with Jo Ann when they needed someone to fill in. Made me feel nostalgic. 😊

Wow, talk about memories!!!, I made this as a newly wed, got recipe from my mom in 60's. To me, it is best chocolate cake out there. Bless you from grandma Katie in Oregon

We had Wacky Cake in my school in the early 60's in Dewey, OK. I loved it! Glad to see the recipe!!

Loved your Whacky Cake video. I’m making one tomorrow from your video recipe, being it’s to late tonight. Looks delicious. Dusting the pan with baking cocoa powder is genius! Dan is a veteran in front of the camera and he said your kinda shy but you’re a natural and seem so at ease. I’m so happy you both decided to do this. Cooking, gardening. Great job on the new show, I'm enjoying seeing the two of you working together while cooking. I grew up in Tulsa and Eliot elementary had Wacky Cake and cinnamon rolls weekly, it seemed. I worked in the kitchen and it was the best job and extra desserts 🤗 I look forward to more episodes, keep it up.

FYI, I buy Everclear for my extracts! I used to buy vodka until I realized I detested the taste. Everclear is stronger (90 proof, I think) so I add about 1/4 water. Totally tasteless. When making chocolate cake, I typically use extra virgin olive oil because the cocoa covers the taste. For white cake, I use grapeseed oil (tasteless) that I find at Aldi's. Love your idea of dusting the pan with cocoa. Can't waste to taste your Wacky Cake at the Home and Garden show tomorrow!

The school cafeteria story reminds me of a past job I had.
I use to deliver eggs to all the OKC schools during the week.
Favorite days were no bake cookie day.
The lunch ladies always said grab one as they were setting out on the trays all around the kitchens.
