Instant onion pickle

I am obsessed with easy breezy recipes these days. And, I am a complete chutney and pickle fan. So today we are making another super easy and delicious pickle recipe that comes together in no time.
Store in a sterilized jar in the fridge (for up to 2 weeks) and enjoy with dal chawal and parathas.

Let’s see the recipe.

Ingredients

3-4 onions, sliced
4-5 green chillies, slit
2 inches ginger, julienned
Handful of coriander leaves with stems, chopped
1 tsp white sesame seeds
1 tsp fennel seeds
1 tsp mustard seeds
1/4 tsp fenugreek seeds
1 tsp Kashmiri red chilli powder
Salt to taste
2 tsp vinegar

For the tempering
2-3 tsp mustard oil
1/4 tsp hing
1 tsp kalonji seeds
1/4 tsp turmeric powder
Method
1. Dry roast sesame seeds, fennel seeds, mustard seeds, fenugreek seeds. Once it cools down, coarsely grind them.
2. Now in a bowl add onion, green chillies, ginger, coriander, roasted masala, chilli powder, salt, and vinegar. Mix well.
3. Make a tempering and pour over the onions and enjoy :)
