You shouldn’t call co-op members employees. They are co-owners.

People with union admin positions would be against it.

It looks like unions have devolved into a sort of insurance company, in practice. I'm not sure it would actually occur to them to go outside their usual function.

Yes, but when the Coop succeeds, the union is done. Maybe unions are thinking in terms of job security.
