A good reference to have for the "when can you log an approach if you don't fly down in IMC to minimums?" question is FAA's InFO 15012 document. It clarifies the requirements and under what conditions you can log an approach for currency requirements. It specifically states:
"The FAA does not require the ceiling to be at MDA or DA/DH during a flight in IMC. When an aircraft is
flying an IAP in IMC, two outcomes are possible:
1. The aircraft will transition from IMC to visual meteorological conditions that allow a landing in
accordance with § 91.175; or
2. The aircraft will remain in IMC and execute a missed approach at the missed approach point
(MAP) or DA/DH.
In either case, a pilot may log the IAP."

If you were planning the same xc flight but considering waas gps in the aircraft and a vor, would you still plan it using victor airways for the flight planning exercise of a checkride?

It started rough for the student ifr pilot, he knew some answers but was challenged answering in the context of scenarios. You should memorize your personal minimums.

Six approaches in the PRECEDING six months…. So if you got your IFR ticket in January and haven’t done any approaches yet you actually are still current until the end of july.
