I would love to try the cashew flour, it sounds great!

My recipe is for a peanut butter cookie, dipped in dark chocolate:

1 Large Egg
1 Large Egg Yolk
1 teaspoon Vanilla Extract
3/4 Cup Brown Sugar
1 Cup Peanut Butter (salted)
1/2 Cup Almond Flour

Chocolate mixture:
1/2 Cup Dark chocolate, chopped (or chips)
1 Tablespoon Heavy Whipping Cream

Pre-heat oven to 350F
Whisk the egg, egg yolk and vanilla together for a few seconds, then mix in the sugar. Add peanut butter, stir well, add almond flour. Thoroughly mix everything together.
The dough may be a little bit crumbly. Use a 1.5 inch ice cream scoop to measure out the cookie dough and plop it onto the pan. If the mixture is crumbly, after measuring it out, squash it between your hands a few times. Flatten out the dough a little bit & bake for approx 8-10mins or until golden around the edges.
Let the cookies rest for a few minutes & then transfer them to a cooling rack and let them cool down completely.
Take the dark chocolate and heavy cream, put them into a small microwave safe bowl and pulse cook them for 30 seconds at a time until the chocolate is almost all the way melted. Stir until it combines with the cream and completely melts.
Dip the cooled cookies half way into the chocolate mixture & place on parchment paper until set.
Enjoy!

I made a great almond cookies with 1 cup almond flower, 1 tbs of vanilla, 3 tbs of water and 3/4 cup sugar. Cook for 20 minutes and there you go!

Thank you, Kate. I just tried the Cashew flour as a substitute for Almond flour. It worked very well in my Paleo recipes and tasted delicious. Of course, I purchased it from Food to Live. 😊

Here's an alternative recipe to Graham Cracker Pie Crust, that's more nutritious, yet as delicious!

No Bake Pie Crust:
70 grams Rolled Oats
65 grams Almond Flour (or Cashew Flour!)
65 grams Quinoa Flour
70 ml Honey or Maple Syrup (Sugar Free Syrup works here too!)
A Large Pinch of Salt
*Optional: Season to taste w/ 1/2 tsp of compatible spices
*The Almond Flour acts as the Fat in this recipe, keeping it rich yet light.

~Add Oats to Blender or Food Processor and blitz to a coarse meal, then add the Almond and Quinoa Flours, plus any spices to combine.
~Add the syrup and blend to well combined.

The mixture should be crumbly, yet hold together when squeezed in your palm.
Press the dough into an 8-9 inch Pie Tin (lined/oiled)

I'll usually pop this crust in the toaster oven for 10 mins, but you can quickly toast the flours on a stove top 3 - 5 mins if preferred.
And Viola! Homemade Graham Cracker Crust for all your summer pies!!

I don't have much experience baking with flours, but I want to try this simple one--Keto Sandwich Bread:
1.5 Tablespoons Coconut Flour
1 Tablespoon coconut oil, Melted
1 Egg
1/4 Teaspoon sea salt
1/4 Teaspoon Baking Powder

"Preheat oven to 350 degrees.
Mix coconut flour, sea salt, and baking powder together until combined.
Add egg and melted coconut oil and mix well.
Let batter sit for a few minutes to allow the flour to absorb the liquid.
Scoop half the batter on baking pan and use a spatula to spread batter into a circle the size of a bun.
Repeat using the rest of the batter. Bake for 10 minutes or until golden brown."

One recipe to play with:
Heat some grain flour (rice/wheat/buckwheat/oat) in oven or in the pan until it turns brown or smell nice. Then do the same thing for some nut flour (almond/coconut/cashew), if the nut flour is sticky, add the grain flour to it. Mix them together, add either sugar or salt. You can eat it directly or add some milk or water, making a cookie dough mixture, or porridge. You can choose your flour (maybe even legumes instead of grains), adjust the ratio, mix it to a texture you like. Have fun. Since I meet food to live, my breakfast is oat and nuts. I've been playing with them. By now, this is my favorite. Oh, I also add some cacao powder for flavor.

2 cups buckwheat flour
2 tsp coconut oil or olive oil
3/4 cup of water
1 tsp of dried herbs
1 tsp salt

Take the ingredients mix together wet vs dry into two separate bowls.
Take the mixed bowls combine them.

Take the dough once prepared and pinch off handful and roll into a ball. Then place them on the counter and let them sit for 20 minutes.
Roll the balls flat into a circle.
Put dough onto a skillet with olive oil and cook.
Flip over to other side once one side is done.

Here's a quick chocolate chip cookie recipe:



1-1/2 cups almond flour
2 tbsp coconut flour
1 tbsp gelatin
1/2 tsp baking soda
1/4 tsp salt

1/4 cup sweetener (Lakanto if keto, or coconut sugar)
4 tbsp butter
1 egg
1/4 cup coconut milk
1 tsp vanilla extract

1/2 cup chopped chocolate



Preheat oven to 350F.

In a medium bowl, combine almond flour, coconut flour, gelatin, baking soda, and salt.

In a separate large bowl, cream sugar and butter.
Add egg, milk, and vanilla.

Add dry ingredients to wet. Mix until just combined.
Stir in chocolate chips.

Bake 10 minutes or until lightly browned. Cookies will firm up as they cool.

I love non wheat based flours, and I buy some of them from your company, but it is not true that white flour has no protein. Gluten is protein. Find another argument for avoiding white flour.
