There are wild persimmons here in the middle of the US, but they are much smaller, and hard to find unless you have your own trees. You usually have to wait until they fall off the tree to eat them or until after the first frost. According to old wives tales the seeds can predict what kind of winter it will be. Split the seed and if you see a spoon it will be a snowy winter, if you see a knife it will be cold, and if you see a fork it will be warm...

The persimmon you are holding is a fuyu. Those you can eat more like apples. The other variety you were talking about is the hachiya. Those you do find hung and dried in Japan. They look really cool actually but are a labor intensive process to do. They are astringent if not dried or allowed to fully ripen until they are super soft and pulpy. If you have harder, less ripe, ones you can slice and dry them on a drying rack and they are super delicious. If you allow them to ripen until they are totally soft they are great to use for baking things like persimmon bread (kind of like pumpkin or banana bread).
