Cavatelli is such a simple pasta that everyone should know how to make. The recipe is as easy as mixing 2 parts semolina with 1 part warm water; scale to the size you need. This pairs well with most any sauce, but I've been loving this pork and fennel ragu. The whole thing is delicious and really easy to make.

Cavatelli
300g semolina
150g warm water
1g salt - optional

Pork and Fennel Ragu
450g pork
3 shallots
1/2 fennel bulb
Fennel fronds
Splash of white wine vinegar mixed with water
200g any green spring veggie - peas, asparagus, zucchini
Lemon juice, salt, pepper, red pepper flake
Olive oil as needed
