Changing keys quickly on hymns

Here's how I change a key "on the fly" -- even in the middle of congregational singing when there's no time for an interlude and modulation

This was fun to watch. We had a lady in SS that played the piano for us and she could not read music but played by ear. She also could transpose on the fly. If she started a hymn a little too high, the music director would ask for a little lower and she'd give him a chord and off we'd go.

what notes do you use for the "walk down" to the new key and do you play the 7th after the walk down?
