Great discussion! I really appreciate the info you and Dr. Brooke Goldner are sharing, especially how to optimize a WFPB diet. One question, I'm wondering how you (and Dr Goldner) are testing B12? If you have normal (or even high) blood serum levels of B12, it doe not necessarily mean your cells are absorbing it. In the case of our son when he was a toddler, he had high levels of B12 based on blood serum testing...which was unusual since B12 is water soluble and he also had high homocysteine levels (which is an indication that you are NOT getting enough B12). When we tested his intracellular nutrient levels using SpectraCell, his B12 levels came back deficient (thus explaining the high homocysteine levels). At that time, he was eating cereals fortified with B12, but not with methylated B12 (which is the bioavailble version). I think what was happening was that the unmethylated B12 was accumulating in his blood since he could not use that version. He and I both have the MTHFR genetic mutation (we both have 2 copies) so our bodies can't use unmethylated B12 - we know this gene is triggered too since our homocysteine levels have come back higher than normal. When I'm consistent about taking methyl B12 though, my homocysteine levels come back closer to normal range. I have not re-checked our son in a few years, but we give him (and his sister) sublingual methyl B12 a few times per week just to make sure they are getting an easily assimilated version of B12. Also, it is worth noting that food supplements like nutritional yeast are typically fortified with unmethylated B12, which can be detrimental to those of us who can not convert it to the methylated version and actually makes absorption of B12 worse since it will block receptors. If you know you habe MTHFR (or high homocysteine), I suggest not consuming foods fortified with vitamin B12 unless you know they are methylated. Sari Foods is the nutritional yeast we eat since it is NON-fortified.

What I love is she never refers to a Vegan diet, but always a WFPB diet.

Chapeau, Chapeau.

Let us get this straight, Veganism is a way of life not a Diet.

I despise the term "Vegan Diet".

A so called vegan diet can consist of only French fries, Oreo cookies, Coke/Pepsi/Sprite, fried Onions, wonder Bread, Spread with "I cant believe it is not butter'", Gummy Bears (Vegan) and a whole host of Vegan processed Junk food.

People eating like this are going to be unhealthy, and probably more unhealthy than those following a traditional western diet.

As Michael Pollan said" Eat real food, mainly Plants and not too much.

Follow a Low Fat Whole Food Plant Based diet, Limited oil, salt and sugar, no Processed foods and very limited animal products, (maybe once a month) good for you good for the planet.

Do as Jeff Novick says, dont eat C, R, A, P Calorie Rich And Processed foods.

Combine This with what Michael Pollan says and you have a perfect recipe for a healthy di
