We all love and need good comfort food especially now that it's getting chilly, but often it's very fattening. So, I brought Dave Venable from QVC here to show a skinny version. You wrote me in because you only know how to cook one thing, right? I need help! The only thing I know how to cook is chicken & rice & I got the Chinese man on speed dial. Alright, alright! If you already cook chicken, then you're already half way there! We're going to do something we all know Bethenny is going to love, Skinny Chicken. I know my girl Bethenny loves some skinny up in here! Dave, you are the man from QVC that always makes everything taste so delicious and look so delicious! When you see him taste it, it's like you're watching food porn! Well, I tell you what. It's easy to get excited about good food and it's easy to make great food healthy. And so we're going to do classic fried chicken and mashed potatoes today, but with a very, very healthy twist. And because you already cook chicken, you're already half way home! What we're going to do first ladies, is take a re-sealable bag. We've got boneless chicken breast inside, to that we're going to add buttermilk. So, Lisa if you'll hold open the bag and Bethenny if you'll do the honors. Ok. And buttermilk is healthy? Buttermilk is actually healthy because it's got less fat than whole milk. It's actually less than 1 gram of fat per serving. It gives it tang. Exactly, the acid in the buttermilk helps to tenderize the chicken. Now Bethenny, what we're going to do next is the hot sauce. Oh! I like the hot sauce. Just throw in the hot sauce there. It gives it great flavor. Now seal that up, Lisa. Any kind of hot sauce? Any kind you like. And ladies, shake that up because that's going to have to go into the refrigerator. This is going to be marinated. I'll take it back for you, dear. That'll be the only thing in that refrigerator, Dave. I'll tell you what. We have already marinated some up about 2 hours, so we're ready to rock and roll. Now, what I'm going to do is ask you to hold that open for me there. Now what you can do is you can do this with anything. Veal or pork. You certainly could. I think most people keep chicken on hand. And my girl Lisa likes chicken. I love chicken. That's the only meat I have in my house. I have firm tofu and you can do with tofu too. You certainly could. If you're vegetarian. We're going to take the rest of the marinade and we're going to reuse this. You can reuse the marinade? You can if you're going to cook with it. You should never use it on anything that you would immediately serve. We're going to dredge this in flour first, all purpose flour. Ladies, we've got to get our cornflake mixture. We've crushed up regular cornflake, not frosted, and then you're going to do some of the spices here. This is onion powder, garlic powder, salt, pepper, poultry seasoning, all together. This is what I call dump cooking. Dump and stir! Can you use any breadcrumb or any type of cereal? You can use Panko if you wanted to. I find the cornflakes are just crunchier. I'm glad you can use those spices because the only thing I know is salt & pepper. Get that nice and mixed up and pour it right into this bowl. We're going to get our crunchiness on the outside. Once we've got it dredged in flour, we've got to moisten it again. You're saving calories, you're not using egg. That's right. Exactly! Because everything about this dish is healthy! Get your cooling rack, that you usually put cookies on, spray this with a little nonstick cooking spray and put this on top of your cookie sheet. Put this right on top here. Because when you put this in the oven, it looks like it's going to be really tender. This is going to be very crispy because this is convection cooking. We've already baked some off. How do you get families to connect at dinner? The most important thing is make an appointment for dinner, get everyone around the dinner table and collect cell phones. The rule is dinnertime is around the family table. This is mashed cauliflower, low in carbs, high in folic acid, high in fiber, and high in vitamin c. I'm tasting the tofu one. I'll do a little chicken myself.
