Pikelets! Silver dollar pancakes. Drop scones. Mini hotcakes. Whatever you know these as, these baby pancakes are absolutely irresistible! Serve for breakfast or morning or afternoon tea with copious amounts of jam and cream. - N x ❤️

Pikelets

INGREDIENTS
1 1/4 cups plain flour / all purpose flour (185g)
2 1/2 tsp baking powder
2 tbsp white sugar
Pinch of salt
1 large egg (~55g/2oz in shell)
3/4 cup 185ml milk (185ml)
1/2 tsp vanilla extract
2 tsp butter, for cooking
To Serve:
Strawberry jam and cream (heavy cream, whipped)

1. Whisk flour, baking powder, salt and sugar. Make a well in the centre, add egg, milk and vanilla. Whisk until the batter is almost lump free - a few small ones is ok. The batter should be the consistency of thick honey.
2. Melt 1 tsp butter in a non-stick pan over medium high heat (medium for strong stoves). Then wipe most of the butter off with a paper towel so there are no visible drops of butter. This makes the first batch cook nicely instead of extremely splotchy on the surface (visual only).
3. Pour ~2 tbsp batter into the pan and coax into 7.5cm/3” rounds. Cook until bubbles appear on the surface and when 4 or so pop, flip (1 – 1.5 min each side). Repeat with remaining batter.
4. Serve warm with jam and cream, or butter!

I remember my Mum making pikelets in our Sunbeam frypan with the clear lid, so you could see the bubbles and know when to flip them. An afterschool staple for my boys

For the American viewers: Yes, they're basically just mini pancakes. Yes, we call it "Strawberry Jam" ("Strawberry Conserve" in the older days). It's not "jelly" here, that's what we call jello. :)
For the English: No, it doesn't matter whether you go cream-then-jam or jam-then-cream. :)

edit: does anyone else remember getting the occasional bonus pikelet (cold but pre-spread with butter) in your lunchbox as a kid?

My first volunteer gig at my kids' school was Head Pikelet Maker. Being American by birth, I was nervous, but when I figured out they were basically little pancakes, I rocked that bugger and got all the kiddies lining up.

I'd forgotten pikelets. That vid just shot me back 65 years, Satdee arvo home with mum while the old man was playing bowls, we'd have a secret little cook-up all to ourselves. Got tears now, great days indeed. And I've got extra cream left in the fridge from making a Basque cheesecake. Oh we're on. Tomorrow for sure.

I make these for my kids all the time. They freeze really well for lunchbox snacks, too. Self raising flour instead of plain flour and baking powder here, though.

They were pikeys at home. A neighbour would visit Mum every Friday with pikelets knowing Mum would have her two grandsons on the weekend. While they were little boys the pikelets didn't last very long after they arrived. By the time they got to be teenagers there would still be some left on Monday. Seems you can have to much of a good thing. It might just take a decade or more. 😂

Have you ever noticed how the first batch of piklets never brown up nicely in the first side! Every batch after that are beautiful and golden, but those first few 🤦🏼‍♀️
I have a sunbeam frypan hogging space in my cupboard specifically for making piklets & pancakes. It still makes the best piklets out there.

What makes these different from American pancakes? I’m not being sarcastic, I’m genuinely curious in the difference because maybe I’ve been making Pikelets all these years and didn’t know it 😂

👉 South Africans call then ‘flapjacks’ or ‘crumpets’. In Britain, those are completely different things. Does anyone know the original English word for these? ❤

American here…these are basically, if not exactly, pancakes (I’ll have to compare how much sugar goes into a scratch recipe) but what we don’t really do/have here is the—what appears to be—“clotted” cream situation she has going on here… can someone share about this? What’s it taste like? Somewhere between butter and whipped cream? What’s the best way to make it? It looks amazing.
