Looks like a Fagus aka Beech to me. But I read in your comments you dug it in France. It's useful to use botanical names rather than common names to avoid confusion. European Hornbeam is Carpinus betulus.

Thats a Beech (Fagus Sylvatica) not a Hornbeam (Carpinus Betulus)

the collecting must be done in early spring or someting can be done in fall?

Nice video, question, is it ok to completely cut oak, or birch back say to about 3 inchs from the ground, so nothing is left at all, I have some oak & birch in the ground, I want to cut back nearly to the ground.
