the only tip I have for fish is to use plenty of oil, but fish is tough, them suckers really do be stickin. I'm glad you mentioned that this was the best greens based dish you've had, for me it was leaf stew, which is the national dish of Sierra Leone. its got stewed cassava greens that I subbed spinach for, peanut butter or ground peanuts, beef, eggplant, onion, smoked fish, ground crayfish, chicken bullion, and scotch bonnet, fricking excellent
