When I saw the very first one, number 20, kept me from moving on with my browsing. A bout a year ago, I took an old toaster oven and pulled the controller like this person, and did a simple prototype using ESP8266 for control. I did fan control and PID temp, but far from the nice looks of this project. My goal at the time was to put applewood in to create smoke with a bit of temperature control, and feed that to another unit where the fish would go. Never made it to step two. lol Nice project, and thanks for sharing.
