Coconut Rice Recipe - HoneysuckleCatering

Ingredients:
- 2 cups Jasmine Rice
- 1 tsp. Sugar
- Pinch of Kosher Salt

Preparation:
I'm rinsing 2 cups of jasmine rice well in my pot. Then I'm taking approximately 4 cups of the coconut milk that we just made, pouring it over the rice. When I'm making rice on the stove i usually always eyeball. My mom and grandma use the finger dipping technique, where they will hold their finger just on top of the rice, and pour enough water just so it rises to the first crease of their index finger. This eyeballing method is tried and true. Now add in 1 teaspoon of sugar and a pinch of salt.

I'm putting the pot on the stove on medium high heat. I'll keep it at this level to boil until the coconut milk has almost evaporated. This should take about 10-12 minutes. Then I'll cover my pot and turn the heat down to extra low for 15 minutes. The rice will finish steaming at this point. Once it's done, I'll take a fork and fluff it up.

I love serving this with curry or my thai basil chicken. It adds this Coconutty flavor that's so good, it's a little bit sweet yet a little bit nutty. You'll love this recipe. Comment below if you've ever had Coconut Rice and please don't forget to subscribe. I'll see you guys next time! Bye

I've had coconuts rice before. I put coconut shavings in it and a bit of brown sugar I think. Adding some cilantro and lime on top once cooked makes the taste even more amazing

Omg! My mom taught me how to measure water/liquid for rice the same way with the index finger trick! She learned from her mom also :). We're Chinese, btw!

I just made this recipe for my and my 6 y.o. I usually buy Uncle Ben's Instant Jasmine Coconut Rice. Never again will I buy it. I bought sweetened dried coconut by mistake, so I didn't add additional sugar; just the pinch of salt. It gave the perfect amount of sweetness. Excellent and simple recipe!

Here in Malaysia we call it nasi lemak, which can be translated directly as oily rice. We usually eat them along with sambal (a type of chilli paste) squid or chicken. It's so common here that even me, a Chinese, eat them weekly.

So I'm Trinidadian and I have an affinity for curries and all things Eastern. We tend to cook a lot with coconut rice. How I do mine is like an equal amount of coconut milk and water, olive oil, sea salt, and minced garlic. If I want to liven the rice up, I do green onion or put a little bit of raisins in there for pops of sweetness.

As a Malaysians, we ate this rice with sambal (some kind of chilli dishes), sliced cucumber and boiled egg. Many Malaysians love to eat this dish in the morning :D

A lot of restaurants cheat nowadays and just make plain rice with water and throw a few coconut shavings in at the end. Never has the same flavour. Very glad that you have the original recipe, which is all coconut milk, no water added at all. Thank you!!!

My coconut rice never tasted quite right or had the right consistency until I tried your method of cooking uncovered for 10 to 12 minutes. I had just always cooked it covered for the entirety of the cooking process. I also never added the little bit of sugar before I tried your recipie. Those things are critical to getting the texture and taste down. I had my rice with butternut squash curry, so delicious.

Hi..!this is called nasi lemak in Asia. :) if you want to amp it up a little bit, u can add pandan leaves, small slice of ginger, and one slice of garlic. You can eat it with sambal (chili gravy), fish (or any meat if you prefer), cucumber, eggs and fried anchovies.

I made coconut rice for thanksgiving. I made up the recipe. I cooked the rice in coconut milk and then added coconut flakes. Very yummy!!

Thanks for this very informative upload, Dzung!  I think measuring the water with your index finger is definitely a Vietnamese thing...however, I was not paying attention while growing up and didn't fully comprehend what I was doing, but alas, you have enlightened me. LOL!  I used my finger to measure the rice, then add water by the same amount.  After watching your video, mind blown!  I didn't know that you didn't need to measure the rice line, but only add water to the first knuckle line.  Heh.  And as a rice eater without a rice cooker, I like the advice on how to cook the rice with lid off until the water is almost evaporated before closing the lid (I've done this with Spanish rice, but never thought it's done the same way with any other rice).  Thanks for educating me!!!

I am Hispanic and I love everything with coconut mostly everything and someone told me about coconut rice so your video was the first one I looked at and loved and actually made it and I love your recipe the only difference I add was trivia sugar not real sugar but still bomb thanks for this recipe I do this once a month to treat myself I love chicken curry with coconut milk too lol I am coconut lover love coconut popsicle, ice cream, rum, pancakes and French toast and horchata with coconut flavors and more
