You can sharpen the cheapest bit of steel and it will do this. The difference is that good steel will make this same cut many times before needing honing.

that edge is sharp but it's not gonna retain that same sharpness for long. fact is you dont need that kind of sharpness for everyday cutting work

Самое главное, на сколько долго тесак сможет сохранить остроту. Обычный столовый нож тоже при хорошей заточке сможет сделать такой трюк, но после нарезки хлебушка повторить такое уже не сможет.

A knife can cut either because of edge geometry or thinness. This has both. Not to mention the ring on that steel is quality for sure.
