Bill Hader is literally one of the only people to tell a story completely normally and it be better than nearly all the stand up available atm.

Ha, I lived in the building above Joe's coffee on 23rd and I used to see Bill Hader often getting coffee there. It's funny to see him explain that character was based on the barista who worked memory of seeing Bill was that he always looked hungover every time I saw him getting coffee. It was usually when I was walking my dog, I'd see Bill shuffle past me with his eyes half open and go straight into Joe's coffee.. I have no idea if he was hungover or not, or if he drinks booze or not, but I remember Bill always looked hungover to me. Maybe he's just not a morning person, till he gets his coffee.

So, Stefon is hilarious, but I think the reason the character is so loved (at least to me) is because of watching Bill break, which he was always doing with the Stefon character. Especially when you find out Mulaney was often purposely trying to get Bill to break with surprise jokes on the cards.
