Shortbread cookies with brandy butter icing for Christmas!

Recipe:
4 cups of flour
2 cups of cornstarch
2 cups icing sugar
3 cups of butter

Cream butter and icing sugar together.
Combine the flour and cornstarch.
Add the combined flour and cornstarch to the creamed butter, knead about 5 minutes.
Place in the fridge for at least 45 minutes, 2 hours is better.

Bake at 350 for 15 - 20 minutes until edges are golden brown.

For the Icing:
3 cups of icing sugar 1/3 cup of butter, cream together.
Add 3 - 5 tablespoons of Brandy 1 tablespoon Tia Maria or Vanilla.
Add pecan on top.

what a great idea rolling the dough up into logs, makes it easier to cut.

By quickly slicing them with a knife instead of the old way of rolling and cutting over and over again! Love that idea and Merry Xmas
