BURRITO BOWL 🌯So quick and easy
to make!
Ingredients (4 servings)
0.5 cup dry rice
1 red onion
1 bell green pepper
2 tbsp taco seasoning
1 cup canned black beans
0.5 cup canned corn
2 ialapeños
1 cup salsa
0.5 cup water
½ cup vegan cheese
Assemble:
4 cups lettuce
0.5 red onion
0.5 cup Cilantro
4 tbsp Guacamole
4 tbsp Vegan yoghurt
Instructions:
1. Cook your rice according to package instructions.
2. Saute onion and bell pepper for a few minutes. Then add the taco spice, stir for another minute.
3. Add the rice, corn, black beans, jalapeños, salsa and water. Cook for another 5-8 minutes.
4. Sprinkle some shredded vegan cheese on top and lower the heat. Let the cheese melt while chopping up the ingredients listed under "assemble".
5. Assemble the burrito bowls and enjoy!
